About five months in iron steel tanks with weekly stirring to move fine lees.
Very light bentonite fining before filtering and bottling.
One month in bottle before selling.

Colour: Crystal clear appearance, straw-yellow color with large greenish reflections.
Nose: Citrus notes such as lemon and bergamot, subsequent nuances of thyme and eucalyptus.
Mouth: Large, soft entrance, very warm with central fluent mouth with savory finish and slightly bitter.
